Banana bread overnight oats

Try a nutrient-packed breakfast bowl with rolled oats, flaxseeds, Greek yogurt, bananas, strawberries, and zesty grapefruit for a healthier twist on classic banana bread.
Ingredients:
  • 330ml milk
  • 90g rolled oats
  • 1 medium ripe banana, mashed
  • 190g yoghurt
  • 20.00 ml flaxseeds (optional)
  • 1 tsp vanilla bean paste
  • 57.20 gm honey
  • 1 small banana, extra, thickly sliced lengthways
  • Ruby Red grapefruit segments, to serve
  • Sliced strawberries, to serve
  • Chopped walnuts, to serve
  • Honey, extra, to serve
Instructions:
  • In a medium bowl, mix together oats, mashed banana, yogurt, milk, flaxseeds (if using), vanilla, and 1 tablespoon of honey. Cover with plastic wrap and refrigerate overnight to soak.
  • Preheat grill to high. Arrange sliced banana, cut-side up, on a greased baking tray. Drizzle with the remaining honey. Grill for 5 minutes or until caramelized.
  • Spoon the oat mixture into serving bowls and top with grapefruit, grilled banana, strawberry, walnut, and a drizzle of extra honey for a beautiful presentation.
