Moist banana bread made extra tasty with natural yoghurt.
Ingredients:
  • 100g unsalted butter
  • 100g brown sugar
  • 1 egg
  • 4-5 bananas (450g total), mashed
  • 60.00 ml (1/4 cup) natural yoghurt
  • 250g plain flour
  • 10.00 gm baking powder
  • 1.25 gm ground cinnamon
  • 57.50 gm walnuts, toasted (optional)
Instructions:
  • Turn your oven up to 170°C (no need for fan), then generously grease a 900ml loaf pan.
  • Cream together the butter and sugar in a bowl until light and fluffy using an electric mixer.
  • Combine egg and beat until fully incorporated.
  • Combine ripe banana, creamy yoghurt, and fragrant vanilla extract in a mixing bowl and mix well. In a separate bowl, sift flour, baking powder, and aromatic cinnamon together, then carefully fold into the batter. If using walnuts, gently stir them in. Transfer the batter into a pan and bake for one hour or until a skewer comes out clean when inserted in the center. Allow it to cool in the pan for 10 minutes before transferring onto a rack to cool completely. Serve with a pat of butter if desired.
