Make Curtis Stone's amazing banana bread for a delicious treat at home.
Ingredients:
  • 2 large Brand Free Range Eggs
  • 268.75 gm caster sugar
  • 115.00 gm vegetable oil
  • 4.40 gm vanilla extract
  • 40.00 ml natural yoghurt
  • 3 large ripe bananas, mashed
  • 172.50 gm walnuts, toasted and chopped
  • 415.00 ml plain flour
  • 2.50 gm bicarbonate soda
  • 1.25 gm Brand Ground Cinnamon
  • 0.60 gm salt
Instructions:
  • Preheat your oven to 180C (160C fan-forced) and prepare a 21cm x 11cm loaf pan by greasing and lining the base.
  • In a stand mixer or using electric beaters, whip eggs and sugar on medium-high speed for 10 minutes until very thick and pale, forming a ribbon when the beater is lifted. Gradually add oil on low speed, followed by vanilla, yogurt, bananas, and walnuts. Mix briefly and then proceed.
  • Combine the flour, baking soda, cinnamon, and salt in a large bowl. Pour the wet mixture into the dry ingredients and gently fold until fully incorporated.
  • Transfer the batter into a pan and bake for 1 hour and 15 minutes, or until a skewer inserted comes out clean. Let it cool in the pan for 10 minutes before flipping it onto a rack to cool.
