Greek-inspired grilled chicken with whipped feta - Chef John's special marinade and grilling method for juicy boneless, skinless chicken breasts.
Ingredients:
  • 4 (8 ounce) boneless, skinless chicken breasts
  • 0.25 cup red wine vinegar
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried rosemary
  • 0.5 teaspoon garlic powder
  • 0.25 cup olive oil
  • 1 drizzle olive oil, or as needed
  • 2 tablespoons chopped Italian parsley
  • 2 tablespoons chopped fresh mint
  • 1 cup full-fat Greek yogurt
  • 8 ounces feta cheese
  • 1 teaspoon finely crushed garlic, or to taste
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lemon zest
Instructions:
  • Prepare all your wonderful ingredients.
  • Slice the chicken breasts lengthwise.
  • In a bowl, mix red wine vinegar, kosher salt, black pepper, cayenne, thyme, oregano, rosemary, and garlic powder. Add chicken and toss until well coated. Pour in ¼ cup olive oil and toss again. Cover with plastic wrap and marinate in the refrigerator for 1 to 12 hours, with 2 to 3 hours being optimal.
  • Transfer the Greek yogurt to a bowl and mix in crumbled feta cheese. Add garlic, mint, and lemon zest, then blend until creamy using an electric hand mixer or whisk until fluffy. Taste and adjust seasoning as necessary. Chill in the refrigerator until ready to use.
  • Heat up a charcoal grill until the coals are glowing white and extremely hot.
  • Grill the chicken over hot coals, flipping occasionally, until fully cooked and reaches an internal temperature of at least 150 degrees F (65 degrees C). Rest for 5 minutes before serving.
  • Smooth whipped feta onto a platter or plate and layer with chicken.
  • Garnish with vibrant fresh Italian parsley and mint before serving.
