Indulge in juicy grilled chicken stuffed with flavorful herbs, cheese, and olives for a delightful evening pairing with wine.
Ingredients:
  • 1 container (4 oz) garlic-and-herbs spreadable cheese
  • 1/3 cup coarsely chopped kalamata olives, patted dry
  • 1/3 cup finely chopped green onions
  • 1 1/2 teaspoons chopped fresh oregano leaves
  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
Instructions:
  • Preheat the grill. Mix cheese, olives, onions, and oregano in a bowl. Lay chicken flat and slice a pocket lengthwise in each breast. Fill each pocket with the cheese mixture and secure with toothpicks. Brush with oil, then season with salt and pepper.
  • Grill the chicken over medium heat with the grill covered for 8 to 10 minutes, turning occasionally, until the juices run clear and the center of the thickest part reaches 170°F.
