Mixed herb & cumin tzatziki

Elevated Greek yogurt dip with a touch of spice and extra fresh herbs.
Ingredients:
  • 390g (1 1/2 cups) Greek-style natural yoghurt
  • 1 tsp cumin seeds
  • 2 Lebanese cucumbers, peeled, coarsely grated
  • 1 garlic clove, crushed
  • 40.00 ml chopped fresh mint
  • 20.00 ml chopped fresh dill
  • 10.60 gm fresh lemon juice
  • Lebanese cucumber, extra, to serve
Instructions:
  • Place the yogurt in the center of a large square of muslin. Gather the sides of the muslin to form a tight ball around the yogurt. Tie the top with string and attach it to a wooden spoon handle. Place the setup over a bowl and refrigerate for 6 hours to allow it to drain.
  • Toast the cumin seeds in a small frying pan over medium heat for 1-2 minutes until fragrant. Allow to cool before using.
  • Squeeze out excess liquid from the cucumber using your hands. Combine cucumber, yoghurt, cumin seeds, garlic, mint, dill, oil, and lemon juice in a large bowl. Stir well. Transfer the dip to a serving bowl and serve with extra cucumber slices.
