Elevate weeknight dinners with a flavorful beef and sweet potato meatloaf featuring aromatic herbs.
Ingredients:
  • 1kg lean beef mince
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 1 large carrot, peeled, grated
  • 45.20 gm barbecue sauce
  • 1 egg, lightly beaten
  • 20.00 ml plain flour
  • 40.00 ml chopped fresh rosemary leaves
  • 62.50 ml chopped fresh oregano leaves
  • 200g orange sweet potato, peeled, thinly sliced lengthways
  • 62.50 ml chopped fresh tarragon leaves
  • 62.50 ml chopped fresh basil leaves
  • 65.00 gm tomato sauce
  • 125g cherry tomatoes, halved
  • 40.00 ml pine nuts
  • Steamed asparagus, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and lightly grease a 7cm-deep, 13cm x 24cm loaf pan.
  • Combine mince, onion, garlic, carrot, barbecue sauce, egg, flour, rosemary, and oregano in a large bowl. Mix well. Spoon half of the mixture into the prepared pan and press down firmly to level. Layer half of the sweet potato over the mince mixture, followed by tarragon and basil. Add the remaining sweet potato in a single layer over the herbs. Spoon the rest of the mince mixture over the sweet potato and press down firmly to level.
  • Bake the meatloaf for 45 minutes until browned and pulling away from the sides of the pan. Spread with tomato sauce, then top with tomatoes and pine nuts. Bake for another 15 minutes until fully cooked. Rest for 10 minutes before serving with asparagus.
