Herb-infused mixed greens salad with sweet figs and dressing.
Ingredients:
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 4 fresh figs
  • 8 cups mixed salad greens
  • 0.5 cup chopped pecans, toasted
  • 0.25 cup flat-leaf Italian parsley leaves
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons sliced green onion
  • 3 tablespoons crumbled feta cheese
Instructions:
  • In a small bowl, combine olive oil, lemon juice, salt, and pepper to create a delightful dressing.
  • Slice the figs into quarters lengthwise, then cut each quarter in half and slice.
  • Combine mixed greens, figs, pecans, parsley, mint, dill, and green onion in a large bowl. Drizzle dressing over salad and toss to coat. Finish with a generous sprinkle of feta cheese before serving.
