Vibrant citrus salad with greens, oranges, red onions, walnuts, Gorgonzola, and zesty vinaigrette.
Ingredients:
  • 0.75 cup walnut halves
  • 10 ounces mixed salad greens with arugula
  • 2 large navel oranges, peeled and sectioned
  • 0.5 cup sliced red onion
  • 0.25 cup olive oil
  • 0.25 cup vegetable oil
  • 0.66666668653488 cup orange juice
  • 0.25 cup white sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon ground black pepper
  • 0.25 cup crumbled Gorgonzola cheese
Instructions:
  • Toast the walnuts in a skillet over medium heat for 5 minutes, stirring constantly until they turn a light golden brown.
  • Combine the toasted walnuts, salad greens, oranges, and red onion in a large bowl.
  • Combine the olive oil, vegetable oil, orange juice, sugar, vinegar, mustard, oregano, and pepper in a large jar with a lid. Seal the jar tightly and shake well to mix all ingredients thoroughly.
  • Portion out the salad greens into individual bowls. Top each with a generous sprinkle of Gorgonzola cheese and a drizzle of the dressing.
