Orange, date and walnut muffins

Ingredients:
  • 1 orange
  • 131.25 gm orange juice
  • 187.50 ml dates, pitted
  • 125.00 gm butter, melted
  • 375.00 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 4.00 gm baking powder
  • 1.20 gm salt
  • 168.75 gm sugar
  • 57.50 gm walnuts, chopped
Instructions:
  • Preheat the oven to 200C and generously grease a 12-hole muffin tray.
  • Chop the orange into chunks, removing any seeds but keeping the flavorful rind. Put the orange pieces and juice into a food processor. Pulse until the orange is finely chopped. Add in the dates, egg, and butter, then pulse to blend everything together.
  • Sift together flour, baking soda, baking powder, and salt. Transfer to the food processor, add sugar, and pulse until just combined. Fold in walnuts.
  • Fill tins three-quarters full with the batter and bake in the oven for approximately 15 minutes, or until done.
