Orange and date cookies: A perfect balance of tangy citrus and sweet dates for a decadent treat.
Ingredients:
  • 1.5 cups chopped pitted dates
  • 0.25 cup white sugar
  • 1 pinch salt
  • 0.75 cup orange juice
  • 0.75 cup water
  • 1 teaspoon orange zest
  • 0.66666668653488 cup chopped pecans
  • 3.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon baking soda
  • 0.75 teaspoon salt
  • 0.75 cup butter, softened
  • 0.5 cup white sugar
  • 1 cup brown sugar
  • 1.5 teaspoons vanilla extract
  • 2 teaspoons orange zest
Instructions:
  • Combine dates, 1/4 cup sugar, salt, orange juice, and water in a saucepan over medium heat. Cook until dates have softened, stirring often. Take off heat and mix in orange zest and pecans. Once cooled, blend in a food processor until pecans are finely ground. Set aside.
  • Combine the flour, baking powder, baking soda, and 3/4 teaspoon salt in a bowl. In a large bowl, mix the butter, 1/2 cup white sugar, and brown sugar until creamy. Add eggs one at a time, then mix in the vanilla and 2 teaspoons orange zest. Slowly add the dry ingredients and mix until smooth. Divide the dough into thirds, wrap in plastic, and chill in the refrigerator until firm.
  • Roll out each portion of dough into a 1/4 inch thick rectangle. Spread the filling evenly over each rectangle, leaving a 1-inch border on one long side. Starting at the opposite edge, roll up the dough like a jellyroll and seal by pressing lightly. Wrap the rolls in waxed paper and refrigerate until firm.
  • Preheat your oven to 350 degrees F (175 degrees C) and grease your cookie sheets. Slice chilled rolls of dough into 1/4-inch thick coins and place them 2 inches apart on the prepared sheets.
  • Bake in the preheated oven for 12 to 15 minutes until lightly golden. Let cookies cool on the sheets for a few minutes before transferring to wire racks to cool completely.
