Try this quick and delicious muffin recipe from Betty Crocker's Diabetes Cookbook!
Ingredients:
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 3/4 cup Gold Medal™ all-purpose flour
  • 3 teaspoons baking powder
  • 1 cup fat-free (skim) milk
  • 1/4 cup packed brown sugar
  • 1/3 cup canola or vegetable oil
  • 2 teaspoons grated orange peel
  • 1 egg
  • 1/2 cup chopped dates
Instructions:
  • Preheat oven to 400°F. Grease only the bottoms of 12 regular-size muffin cups with shortening or cooking spray, avoiding paper baking cups.
  • Combine the flours, baking powder, and salt in a large bowl. In a separate medium bowl, whisk together the milk, brown sugar, oil, orange peel, and egg until well combined. Gently mix the wet ingredients into the dry ingredients until just moistened. Fold in the dates, then distribute the batter evenly into the muffin cups.
  • Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean and the tops are golden brown. Gently loosen the sides of the muffins with a knife, then transfer them to a cooling rack. Enjoy warm.
