Tangy orange pairs perfectly with sweet dates in these fluffy scones.
Ingredients:
  • Melted butter or margarine, for greasing
  • 350g self-raising flour
  • 36.00 gm sugar
  • 2.40 gm salt
  • 40g (2 tbsp) butter
  • 1 orange, rind finely grated, juiced
  • 165g dried date
  • 1 egg, lightly whisked
  • 125mls (1/2 cup) milk
  • Butter, to serve
Instructions:
  • Preheat your oven to 180°C, then lightly grease a baking tray with melted butter or margarine.
  • Sift together flour, sugar, and salt into a large mixing bowl. Use your fingertips to rub in the butter until the mixture looks like fine breadcrumbs. Add the orange rind and dates, and mix well.
  • In a small jug, mix the orange juice, egg, and milk. Create a well in the dry ingredients and pour in the combined liquids. Use a round-bladed knife to mix until the dough starts to form. Shape the dough into a ball with your hands. Transfer the dough to a lightly floured surface and flatten into a 2cm-thick round. Cut out scones with a floured 5cm cutter and place on a baking tray. Repeat with any leftover dough.
  • Bake at the perfect temperature until golden and tap to hear that satisfying hollow sound. Enjoy warm with butter.
