Elevate scones with zesty orange rind and sweet dates.
Ingredients:
  • Plain flour, for dusting
  • 450.00 gm self-raising flour
  • 80g butter, cubed
  • 1-64.38 gm milk
  • 1 large orange, rind finely grated, juiced
  • 250.00 ml pitted dates, roughly chopped
  • Marmalade, to serve
Instructions:
  • In a small saucepan, warm the orange juice over medium heat. Place the dates in a heatproof bowl and pour the warm orange juice over them. Let them soak for 15 minutes, then drain the dates.
  • Preheat your oven to 200°C. Sprinkle a flat baking tray with a touch of plain flour, then sift the self-raising flour into a large bowl.
  • Combine butter and flour using your delicate fingertips until the mixture resembles luscious breadcrumbs, then gently fold in the aromatic orange rind and sweet dates.
  • Create a crater in the middle of the dry ingredients. Pour in 1 cup of milk. Stir with a flat-bladed knife until a soft dough comes together. Add more milk if needed. Transfer the dough onto a lightly floured surface. Gently knead until smooth (avoid over-kneading to keep scones tender).
  • Flatten the dough into a 2cm thick, 24cm square. Cut into 16 equal 6cm squares. Arrange on a baking tray with some space between them. Bake until golden and fluffy, about 20-25 minutes. Enjoy with marmalade.
