Zesty twist on classic sticky date pudding.
Ingredients:
  • 180g pitted dates, chopped
  • 185ml orange juice
  • 2.50 gm bicarbonate of soda
  • 80g butter, softened
  • 140g brown sugar
  • 150g self-raising flour
  • 4.40 gm vanilla essence
  • 2 eggs
  • 2 tsp finely grated orange rind
  • 220g caster sugar
  • 125ml orange juice
Instructions:
  • 1. Preheat the oven to 180°C. Grease six 1-cup muffin pans. Combine dates and orange juice in a saucepan and bring to a boil. Stir in the bicarbonate of soda, then let it cool for 15 minutes.
  • In a separate bowl, cream together the butter and sugar until light and fluffy. Mix in a tablespoon of flour and vanilla essence, and continue to beat until well combined.
  • Add the eggs one by one, beating thoroughly after each one. Gently mix in the flour, date mixture, and orange rind. Divide the batter among the muffin pans. Bake in the oven for 25 minutes. Let them cool for 5 minutes, then turn out and keep warm.
  • In a saucepan, heat sugar and 1/2 cup water until sugar dissolves and turns a rich golden color. Remove from heat, carefully add orange juice, then return to heat and stir until smooth. Drizzle the warm puddings with the syrup, and garnish with orange zest and double cream.
