Irresistible sticky orange glazed drumsticks with loaded jacket potatoes - a family favorite!
Ingredients:
  • 4 large coliban potatoes
  • Olive oil spray
  • 89.38 gm honey
  • 70.63 gm barbecue sauce
  • 65.63 gm orange juice
  • 2 garlic cloves, crushed
  • 1.25 gm smoked paprika
  • 8 chicken drumsticks
  • 4 rashers shortcut bacon, finely chopped
  • 125.00 ml grated cheddar
  • 40.00 ml finely chopped fresh chives
  • 117.50 gm sour cream
  • 80g salad leaves, to serve
  • 125g cherry tomatoes, halved, to serve
  • 1 Lebanese cucumber, cut into sticks, to serve
Instructions:
  • Preheat a barbecue hotplate with hood over medium heat.
  • Pierce potatoes all over with a fork and place on a large microwave-safe plate lined with paper towel. Microwave on HIGH for 5 minutes. Spray with oil, then wrap each in foil. Cook on a barbecue hotplate with the hood closed, turning occasionally, for 25 minutes.
  • In a small saucepan over medium heat, mix honey, barbecue sauce, orange juice, garlic, and paprika. Bring the mixture to a boil, then lower the heat and simmer for 2 to 3 minutes until slightly thickened. Set aside half of the sauce for later use.
  • Prepare the disposable foil baking tray by adding the chicken and brushing it with a bit of the sauce. Next, place the tray on the hotplate along with the potatoes. Cook with the hood closed for an additional 15 to 20 minutes, making sure to turn the chicken and potatoes occasionally while brushing the chicken with more sauce. Cook until both the chicken and potatoes are fully cooked.
  • In a small frying pan over medium heat, cook bacon until golden and crisp. Drain on paper towel and let cool for 5 minutes. Mix bacon, cheese, chives, and sour cream in a bowl. Season with salt and pepper.
  • Peel potatoes gently. Score a cross on the top of each potato. Press the base of the potatoes to open them up. Top with a dollop of sour cream mixture. Enjoy the potatoes with chicken, salad leaves, tomato, cucumber, and the extra sauce on the side.
