Easy summer BBQ trout salad.
Ingredients:
  • 4 (180g each) ocean trout fillets, skin removed
  • 46.80 gm dijon mustard
  • 28.60 gm honey
  • 2 large oranges
  • 20.00 ml apple cider vinegar
  • 9.20 gm olive oil
  • 80g rocket
  • 125.00 ml pitted kalamata olives
Instructions:
  • Preheat the grill to high heat. Line a baking tray with parchment paper and arrange the fish on top. In a bowl, combine mustard and honey, reserving 1 tablespoon of the mixture. Brush the trout with the remaining mustard mixture. Grill the fish for 5 to 7 minutes until golden and cooked through. Transfer to a plate and cover with foil to keep warm.
  • Peel and separate oranges over a bowl, saving 1 tablespoon of juice. Combine saved juice with vinegar, oil, and reserved mustard mixture, whisk together in a bowl.
  • In a bowl, mix together arugula, olives, orange segments, and dressing. Serve the fish with the arugula and orange salad.
