Easy and impressive twist on classic roast lamb - perfect for entertaining.
Ingredients:
  • 1.5kg easy-carve leg lamb
  • 18.20 gm olive oil
  • 35.10 gm wholegrain mustard
  • 57.20 gm honey
  • 2 garlic cloves, crushed
  • 20.00 ml chopped fresh rosemary leaves
  • 2 carrots, peeled, roughly chopped
  • 4 (275g each) pontiac potatoes, peeled, roughly chopped
  • 1 large orange sweet potato, peeled, roughly chopped
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line a roasting pan with baking paper and place the lamb in the pan.
  • Mix together oil, mustard, honey, garlic, and rosemary in a bowl. Coat lamb with honey mixture. Place vegetables in the pan. Roast at high heat for 15 minutes, then lower heat to 180°C/160°C fan-forced. Continue roasting for 1 hour for a medium cook, or until desired doneness. Take out of the oven and let it rest, covered, for 10 to 15 minutes. Carve and serve with roasted vegetables.
