Make a delicious one-pan meal with honey mustard chicken, corn, and potatoes for a simple and flavorful dinner.
Ingredients:
  • 4 Yukon Gold potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon seasoned salt
  • 1 (10 ounce) package frozen corn
  • 1 small onion, chopped
  • 2 tablespoons salted butter, melted
  • 1 serving cooking spray
  • 4 thinly sliced chicken breasts
  • 1 pinch salt and ground black pepper to taste
  • 0.25 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 cup seasoned bread crumbs
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Place the potatoes, olive oil, and seasoned salt in a resealable plastic bag. Seal the bag and shake well to coat the potatoes. Spread the coated potatoes on one third of a sheet pan.
  • In a bowl, toss together corn, onion, and butter until well combined. Spread cooking spray on the other side of the sheet pan, then evenly spread the corn mixture, creating space for the chicken breasts.
  • Roast the potatoes and corn in the preheated oven for 15 minutes.
  • Season both sides of the chicken with salt and pepper. Combine mayonnaise, mustard, and honey. Place bread crumbs in a separate bowl. Coat chicken in the honey mustard mixture, then coat with bread crumbs.
  • - Take out the hot sheet pan from the oven. Mix the corn and turn the potatoes. Give a quick spray of cooking oil in the middle of the pan and place the chicken breasts on it.
  • Bake until the chicken is fully cooked through, approximately 20 minutes.
