Chicken with Cranberry-Honey Mustard Sauce

30-minute honey mustard chicken with sweet dried cranberries for a delicious twist.
Ingredients:
  • 2 tablespoons butter or vegetable oil
  • 1 lb uncooked chicken breast tenders (not breaded)
  • 3/4 teaspoon salt
  • 2/3 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 tablespoon cornstarch
  • 2 tablespoons honey mustard
  • 1/2 cup dried cranberries
  • 1/4 cup thinly sliced green onions (4 medium)
  • 3/4 cup Yoplait® All Natural Fat Free plain yogurt (from 2-lb container)
  • 4 cups cooked white or brown rice
Instructions:
  • Heat butter in a 12-inch nonstick skillet over medium heat until sizzling. Add chicken, season with salt, and cook for 5 to 7 minutes, flipping halfway, until fully cooked through.
  • Combine chicken broth and cornstarch in a measuring cup. Pour the mixture into a skillet and stir in honey mustard and dried cranberries. Cook for about 3 minutes until the mixture thickens, stirring occasionally. Add green onions and cook for an additional minute until tender. Remove from heat and stir in yogurt. Serve over rice.
