Prosciutto-wrapped garlic chicken served with orange-cranberry jus; pairs perfectly with roasted potatoes and veggies.
Ingredients:
  • 2 cloves garlic, minced
  • 0.25 cup softened butter
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 8 thin slices prosciutto
  • 1.25 cups chicken stock
  • 0.5 cup orange juice
  • 1.5 cups fresh cranberries
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a glass baking dish.
  • Combine the minced garlic with the softened butter. Create a pocket in each chicken breast and stuff with the garlic butter. Wrap each chicken breast with prosciutto slices to create bundles. Arrange in a baking dish seam-side down and add chicken stock.
  • Roast chicken in a hot oven for about 30 minutes until fully cooked. Cover with foil and let it rest for 10 minutes before serving.
  • Simmer the chicken cooking liquid, orange juice, and sugar in a saucepan. Add cranberries and cook until they start to pop, about 10 minutes. Strain the mixture through a sieve, pressing to extract all the juice. Discard solids. Slice the chicken breasts, arrange on plates, and top with cranberry jus before serving.
