Prosciutto wrapped chicken breasts with garlic chive cream sauce

Easy, healthy weeknight dinner option with low fat content.
Ingredients:
  • 8 prosciutto slices
  • 4 (about 180g each) chicken breast fillets
  • 250ml Light Cream For Cooking
  • 125.00 ml finely chopped chives
  • 23.40 gm wholegrain mustard
  • 2 garlic cloves, crushed
  • 20g butter
  • 2 bunches English spinach, leaves picked, washed, dried
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 200C. Wrap each chicken breast with 2 slices of prosciutto. Heat a large non-stick frying pan over medium-high heat, add the chicken and cook for 2 minutes on each side until golden brown. Transfer to an oven tray and bake for 10 minutes until cooked through. Let it rest for 5 minutes after removing from the oven.
  • Next, introduce the cream, chives, mustard, and garlic into the pan and gently bring to a simmer. Allow it to cook for 1-2 minutes until the sauce slightly thickens. Then, remove from the heat.
  • In a large frying pan set over high heat, melt the butter until it starts to foam. Add the spinach and cook for 3-4 minutes, tossing occasionally, until the spinach wilts. Remove from the heat.
  • Arrange the spinach on serving plates. Slice the chicken and layer over the spinach. Drizzle with cream sauce and serve with lemon wedges, if preferred.
