Goat cheese and herb-stuffed chicken wrapped in prosciutto, baked to crispy perfection.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 shallots, chopped
  • 1 clove garlic, minced
  • 1 teaspoon chopped fresh thyme
  • 0.25 teaspoon ground black pepper
  • 0.75 cup soft goat cheese
  • 3 dates, chopped
  • 1 tablespoon chopped fresh basil
  • 4 skinless, boneless chicken breast halves
  • 4 large, thin slices of prosciutto
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet by coating it with 1 tablespoon of olive oil.
  • In a skillet over medium heat, heat the olive oil. Add shallots and cook until translucent, about 3 minutes. Add garlic, thyme, salt, and pepper; cook and stir for 2 minutes. Transfer the flavorful shallot mixture to a bowl and combine with goat cheese, dates, and basil until well mixed.
  • Using a sharp knife, create a 1-inch long slit in the thick side of each chicken breast. Then, gently expand the pocket using your fingers.
  • Fill each chicken breast with a generous 1/4 cup of goat cheese mixture, making sure to cover the pocket opening with a slice of prosciutto. Place the stuffed chicken breasts seam-side down on the baking sheet, removing any excess cheese mixture from the outside.
  • Roast in the oven for 20 minutes until chicken is cooked through and prosciutto is crispy. Flip the chicken and roast for another 20 minutes.
