Prosciutto-wrapped chicken breasts filled with leeks - a simple yet elegant main dish.
Ingredients:
  • 1 leek, thinly sliced
  • 8 ounces smoked Gouda cheese, shredded
  • 4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
  • 4 thin slices prosciutto
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  • In a skillet, melt butter over medium heat, then sauté leek and garlic until leek softens and garlic is translucent, around 5 minutes. Take the skillet off the heat, and mix in Gouda until melted. Spread the cheese mixture onto the chicken breasts, then roll them up. Wrap each chicken breast with prosciutto, securing with toothpicks, and place seam side down on a baking sheet.
  • Bake the chicken breasts for around 25 minutes until cooked through and clear juices come out. Check with a meat thermometer – it should register 165°F (74°C). Let the chicken rest for 5 minutes after removing from the oven before slicing and serving.
