Grilled or broiled center-cut pork chops stuffed with gouda, parsley, and bacon for a deliciously decadent dish.
Ingredients:
  • 2 ounces smoked Gouda cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • 0.25 cup chopped fresh parsley
  • 0.125 teaspoon ground black pepper
  • 2 (2 1/4 inch thick) center-cut, bone-in pork chops
  • 1 teaspoon olive oil
Instructions:
  • Fire up the grill to medium heat.
  • Mix together the cheese, bacon, parsley, and a touch of black pepper in a small bowl.
  • Place the chop flat on the cutting board and carefully cut a pocket into the pork with a sharp knife, making sure to reach the bone while keeping the sides intact. Fill the pocket with the cheese mixture, seal with a wooden toothpick, then brush the meat with oil and season generously with salt and black pepper.
  • Prepare the grill by lightly oiling the grate. Grill the pork over medium heat, cooking for 5 to 8 minutes on each side until fully cooked. Be cautious not to overcook the pork!
