Gouda and Spinach Stuffed Pork Chops

Succulent pork chops stuffed with smoked gouda and spinach, coated in horseradish mustard, panko crumbs, and Creole seasoning.
Ingredients:
  • cooking spray
  • 4 (6 ounce) thick cut pork chops
  • 0.5 pound fresh spinach, rinsed and torn into bite-size pieces
  • 8 slices smoked Gouda cheese
  • 1 cup panko bread crumbs
  • 3 tablespoons horseradish mustard
  • 0.5 teaspoon Creole seasoning, or to taste
Instructions:
  • Preheat your oven to 400°F (200°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • Place pork chops on a cutting board and carefully slice a pocket in each chop while keeping three sides intact. Stuff the pockets with spinach followed by cheese.
  • In a shallow dish, place panko crumbs. Spread a thin layer of horseradish over each chop and coat with crumbs. Arrange chops in a baking dish and sprinkle with Creole seasoning.
  • Roast in the preheated oven until golden and crunchy, approximately 45 minutes, or until a meat thermometer registers a minimum of 145°F (63°C) when inserted into the pork.
