Elevate chicken by stuffing it with colorful and flavorful ingredients.
Ingredients:
  • 4 bone-in chicken breasts (1 1/4 lb)
  • 1/2 cup shredded smoked Gouda or Swiss cheese (2 oz)
  • 1/4 teaspoon ground nutmeg
  • 1 package (10 oz) frozen chopped spinach, thawed, squeezed to drain
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 teaspoons butter or margarine, melted
Instructions:
  • Preheat oven to 375°F and grease a 9-inch square pan. Remove bones from chicken breasts while keeping the skin intact, then gently loosen the skin from the chicken breasts.
  • Combine cheese, nutmeg, and spinach in a bowl until fully mixed. Divide the mixture evenly and spread one-fourth of it between the meat and skin of each chicken breast. Gently smooth the skin over the breasts, tucking under any loose areas. Place the chicken in a pan skin side up. Season with salt and pepper, then drizzle with butter.
  • Bake, uncovered, for 45-55 minutes, or until the chicken's juices run clear when the thickest part is cut (reaching 170°F).
