Whip up a quick and easy stuffed chicken breast with a luscious lemon-dill sauce that will impress everyone!
Ingredients:
  • 5 slices bacon
  • 1 shallot, chopped
  • nonstick cooking spray
  • 5 boneless, skinless chicken breasts
  • 0.75 cup ricotta cheese
  • 0.75 teaspoon garlic powder
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 0.25 cup heavy cream
  • 3 tablespoons lemon juice
  • 2 tablespoons dry white wine
  • 1 tablespoon chopped fresh dill
Instructions:
  • Cook bacon in a large skillet over medium-high heat until crispy, about 10 minutes. Remove bacon to drain on a paper-towel lined plate. Reserve bacon grease. Dice bacon when cooled. Sauté shallot in the same skillet with bacon grease over medium-low heat until caramelized, 5 to 10 minutes.
  • Preheat your oven to 375°F (190°C) and generously spray a glass casserole dish with cooking spray.
  • Using a sharp knife, make a lengthwise slit in the center of each chicken breast about 1 inch from the top, stopping about 1 inch from the bottom. Create shallow horizontal slices on the top and bottom of each breast. Repeat for the rest of the chicken breasts.
  • Mix together the chopped bacon, caramelized shallot, ricotta cheese, and garlic powder in a bowl. Fill each chicken breast with 2 to 3 tablespoons of the ricotta mixture and place in the casserole dish.
  • Bake in the hot oven for 25 minutes.
  • In a saucepan over medium-high heat, melt butter, then whisk in flour to create a velvety roux. Gradually pour in chicken broth while stirring, then add cream, lemon juice, white wine, and dill. Stir continuously until the mixture slightly thickens, about 5 minutes.
  • Take the chicken out of the oven, generously drizzle sauce over the chicken breasts, then pop them back in the oven until fully cooked, approximately 10 minutes.
  • Position oven rack 6 inches from heat source and preheat broiler. Broil chicken until lightly golden, approximately 3 minutes.
