Baked lemon chicken breasts stuffed with creamy cheese blend and topped with seasoned mayo - a flavorful weeknight favorite.
Ingredients:
  • 3 skinless, boneless chicken breasts
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup lemon juice, divided
  • 0.125 cup buttermilk
  • 2 tablespoons garlic powder
  • 1 teaspoon ground black pepper, divided
  • 1 teaspoon dried thyme, divided
  • 1 cup mayonnaise
Instructions:
  • Preheat the oven to 400°F (200°C) to create the perfect cooking environment.
  • Carefully slice the chicken breasts lengthwise without cutting all the way through.
  • Combine cream cheese, Parmesan cheese, lemon juice, buttermilk, garlic powder, pepper, and thyme in a bowl. Fill split chicken breasts evenly with the mixture and place them in a casserole dish.
  • Combine mayonnaise, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1/2 teaspoon pepper, and 1/2 teaspoon thyme in a bowl. Spread evenly on both sides of the chicken breasts.
  • Roast in the oven without covering until chicken is cooked through and the juices run clear, approximately 45 minutes. Use an instant-read thermometer to ensure the chicken breast registers at least 165 degrees F (74 degrees C) in the center.
