Garlic-Lemon Double Stuffed Chicken

Cheddar and cream cheese stuffed chicken breasts with garlic-lemon-butter sauce - a guaranteed family favorite!
Ingredients:
  • oil, for greasing pan
  • 8 boneless, skinless chicken breast halves
  • 1 (8 ounce) package cream cheese, cut into 1/2 inch slices
  • 1 (8 ounce) package Cheddar cheese, cut into 1/2 inch slices
  • 1 cup milk
  • 1.5 cups Italian seasoned bread crumbs
  • 0.5 cup grated Romano cheese
  • 1 tablespoon minced garlic
  • 0.75 cup butter, melted
  • 2 tablespoons lemon juice
  • 0.5 teaspoon garlic salt, or to taste
  • 0.5 teaspoon paprika
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Gently grease a spacious baking dish with oil.
  • Butterfly each chicken breast by slicing in half horizontally, ensuring not to cut all the way through. Stuff each breast with a slice of Cheddar and cream cheese, then close it like a book. Set aside for later.
  • First, pour milk into a shallow bowl. In another bowl, mix breadcrumbs and Romano cheese. Dip each chicken breast in milk, then coat in breadcrumb mixture by patting gently. Arrange the breasts in a single layer in a pre-oiled baking dish, folding the edges under to seal.
  • In a small saucepan over medium heat, melt butter. Add lemon juice and garlic, then pour the mixture evenly over the chicken. Season with garlic salt and paprika, if desired.
  • Bake in a hot oven for 30 minutes, or until center is no longer pink and juices run clear.
