Garlic lemon prawns served with crusty bread - deliciously sizzling!
Ingredients:
  • 1 lemon
  • 250ml (1 cup) extra virgin olive oil
  • 3 garlic cloves, thinly sliced
  • 1 long fresh red chilli, thinly sliced
  • 1.2kg medium green prawns, peeled leaving tails intact, deveined
  • 62.50 ml fresh basil leaves
  • Chargrilled crusty bread, to serve
Instructions:
  • Zest the lemon using a zester or a vegetable peeler and a small sharp knife to create thin strips of the rind.
  • In a large frying pan, gently warm the oil, garlic, and chilli over low heat for 5 minutes until fragrant but not browned.
  • Turn up the heat to medium and cook prawns for 1-2 minutes on each side until they curl and change color. Season with salt and pepper, then stir in the lemon rind. Plate the prawn mixture in serving dishes, garnish with basil, and serve with bread.
