Garlic and chilli prawns with green bean & olive couscous

Fluffy couscous absorbs zesty garlic, tomato, and lemon flavors beautifully.
Ingredients:
  • 2 large garlic cloves, crushed
  • 1/2 tsp dried red chilli flakes
  • 42.00 gm lemon juice
  • 350g peeled medium green prawns
  • 190g (1 cup) couscous
  • 200ml boiling water
  • 1 large red onion, halved, thinly sliced
  • 2.50 gm smoked paprika
  • 250g cherry tomatoes, halved
  • 6 pimento-stuffed green olives, thinly sliced
  • 200g green round beans, halved lengthways, blanched
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • In a glass bowl, mix together the garlic, chili, and half of the lemon juice. Add the prawns and toss to coat evenly. Cover and let marinate for 10 minutes.
  • Place the couscous in a large heatproof bowl and cover with boiling water. Let it sit for 4 minutes until all the liquid is absorbed, then fluff it up with a fork.
  • Preheat a large non-stick frying pan over high heat and spray with oil. Cook prawns for 2-3 minutes, stirring occasionally, until they change color. Transfer to a plate and cover to keep warm.
  • Heat a pan over medium heat, then lightly spray with oil. Sauté onion for 5 minutes until soft. Sprinkle paprika and cook for 1 minute until fragrant. Stir in tomato and olives, cooking for 2 minutes until the tomato is just soft. Add couscous and green beans, stirring for 1 minute until heated through. Finally, mix in parsley and the rest of the lemon juice.
  • Serve the couscous mixture in individual bowls and generously spoon the flavorful prawn mixture on top.
