Zucchini & prawn linguine with chilli-garlic croutons

Create a divine seafood linguine that's quick, healthy, and budget-friendly for the perfect pasta dish.
Ingredients:
  • 12 large green prawns, peeled leaving tails intact
  • 120g linguine dried pasta
  • 36.40 gm extra virgin olive oil
  • 150g zucchini, coarsely grated
  • 1 long fresh red chilli, seeded, thinly sliced
  • 3 tsp finely grated lemon rind
  • 60ml (1/4 cup) fresh lemon juice
  • 82.50 ml chopped fresh continental parsley
  • 82.50 ml chopped fresh mint
  • 1 slice (about 30g) sourdough bread, torn into small pieces
  • 1 small fresh red chilli, finely chopped
  • 1 garlic clove, crushed
  • 1 tsp drained baby capers
  • 4.60 gm extra virgin olive oil
Instructions:
  • With a small sharp knife, gently make a cut along the back of each prawn without slicing all the way through. Remove the vein, open the prawn, press down gently to flatten, cover, and set aside for later use.
  • Boil the pasta in a generously salted large saucepan until it reaches the perfect al dente texture. Then, drain the pasta.
  • Prepare the chilli-garlic croutons by combining bread, chilli, garlic, capers, and oil in a frying pan over medium heat. Sauté and stir for 3 minutes or until golden brown, then transfer to a plate.
  • In a pan over medium-high heat, heat half of the oil. Sauté the zucchini, chili, and 1 1/2 teaspoons of lemon rind, stirring occasionally, for about 3 minutes until the zucchini is tender.
  • In a frying pan over medium heat, heat 2 teaspoons of remaining oil. Add prawns and lemon rind; cook for 1 1/2 minutes. Flip the prawns, pour in 1 tablespoon of lemon juice, and continue cooking for another 1 1/2 minutes until prawns curl and change color. Transfer to a plate, cover, and set aside to keep warm.
  • Combine the pasta, parsley, mint, remaining oil, and remaining lemon juice with the zucchini mixture. Toss well. Mix in the chili-garlic croutons. Serve on plates and garnish with prawns.
