Chilli prawn and zoodle stir-fry

Create delicious zucchini 'noodle' stir-fry to impress picky eaters.
Ingredients:
  • 4 large zucchini
  • 20 medium green prawns, peeled, tails intact
  • 2 garlic cloves, finely chopped
  • 3cm piece fresh ginger, peeled, finely chopped
  • 2 long red chillies, thinly sliced
  • 2 bunches asparagus, trimmed, cut into 3cm pieces
  • 600g green beans, trimmed, halved
  • 42.00 gm salt-reduced soy sauce
  • 57.20 gm honey
  • 125.00 ml fresh Thai basil or basil leaves
  • 62.50 ml fresh coriander leaves
Instructions:
  • Spiralize zucchini into long, thin noodles using a spiral slicer.
  • Heat half of the oil in a large wok over medium-high heat. Cook prawns in two batches for 2 to 3 minutes until just cooked through. Transfer to a plate and cover to keep warm.
  • Heat the remaining oil in a wok, then add garlic, ginger, chili, and onion. Stir-fry for 30 seconds until fragrant. Add the asparagus and beans, and stir-fry for 2 minutes until just tender.
  • In a small bowl, mix soy sauce and honey. Pour the soy sauce mixture and zucchini into a wok. Stir-fry for 1 to 2 minutes until the zucchini is tender. Add basil and coriander, toss, and serve.
