Quick and flavorful garlic chilli prawns ready in 20 minutes - perfect for a fast and delicious dinner option.
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 125.00 ml coarse fresh wholemeal breadcrumbs
  • 20.00 ml finely chopped fresh oregano leaves
  • 20.00 ml finely chopped fresh basil leaves
  • 1 long red chilli, finely chopped
  • 400g can cherry tomatoes in juice
  • 750g prawn
  • 2 x 250g packets zucchini spaghetti
  • Finely chopped fresh basil leaves, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat 1 tablespoon of oil. Add breadcrumbs and half of the garlic, stirring occasionally, until golden for 3 to 4 minutes. Mix in oregano and basil, then transfer to a bowl. Wipe the pan clean.
  • Heat the remaining oil in the same pan over medium-high heat. Add the chili and remaining garlic, and cook for 1 minute until fragrant. Then, add the tomatoes and prawns. Cook for 4 minutes stirring occasionally until prawns are cooked through. Lastly, add the zoodles, season, and cook for 1 more minute tossing occasionally until just softened.
  • Plate the mixture, generously sprinkle with breadcrumb mixture and fresh basil leaves, and serve.
