One-pot sweet chilli prawn pasta recipe

"Quick and easy spicy pasta sauce ready in just 10 minutes with minimal clean up."
Ingredients:
  • 40g butter
  • 3 green shallots, thinly sliced
  • 400g can cherry tomatoes
  • 500ml (2 cups) Stock Chicken Style
  • 22.00 gm sweet chilli sauce
  • 350g dried spaghetti pasta
  • 300g peeled green prawns, deveined, tails removed
  • Extra virgin olive oil, to drizzle
  • Chopped fresh continental parsley leaves, to serve
Instructions:
  • In a large, heavy-based saucepan over medium heat, melt the butter until it's foamy. Stir in the shallot and garlic, cooking for 2 minutes until softened.
  • Pour in the tomatoes, stock, sweet chili sauce, and 250ml (1 cup) water. Season with salt. Add the spaghetti and turn up the heat. Cook for 12 minutes, stirring frequently until the pasta is al dente.
  • In a pan, combine prawns and toss with tongs. Cover and cook for 3 minutes until prawns change color. Drizzle with oil, sprinkle with parsley, and season with pepper before serving.
