One-pot nacho bake

Satisfy your family with a delicious and easy veggie nacho bake, minimal cleanup required.
Ingredients:
  • 400g sweet potato
  • 1 red capsicum, sliced
  • 2 zucchini, halved, cut into 1cm-thick slices
  • 420g can Chilli Beanz Hot
  • 2 x 125g cans corn kernels, drained
  • 1/2 x 230g packet yellow corn tortilla strips, roughly broken
  • 187.50 ml grated tasty cheese
  • Fresh coriander sprigs, to serve
Instructions:
  • In a large ovenproof frying pan over high heat, heat oil until shimmering. Add sweet potato and cook, stirring occasionally, for 3 minutes until lightly charred. Add capsicum and cook for another 3 minutes, then add zucchini and cook for an additional 1 minute, stirring continuously.
  • Turn the heat down to medium and gently mix in the beans, corn, and 1/4 cup of water. Season with salt and pepper, then cover and cook for 10 minutes until the vegetables reach the desired tenderness.
  • Preheat the grill to medium-high while you prepare the other ingredients.
  • Top bean mixture with a layer of tortillas and cheese. Grill for 3 minutes until cheese is melted and golden. Serve garnished with fresh coriander.
