Prepare a big batch of one-pot chicken recipe, freeze, and transform it into flavorful Mexican chili chicken with beans for easy weeknight meals.
Ingredients:
  • 400g can tomato polpa
  • 400g can black beans, rinsed, drained
  • 40g pkt fajita spice mix
  • 1 batch Freeze and save one-pot big-batch chicken (see notes for recipe
  • Sweet potato wedges, to serve (see notes)
  • Creme fraiche, to serve, optional
  • Fresh coriander sprigs, to serve
Instructions:
  • Mix the crushed tomatoes, beans, and spices in a sealed container. Freeze for later use.
  • Thaw the bean mixture as instructed. Combine it with the thawed chicken in a large saucepan. Heat over medium high heat for 5 minutes or until heated through. Enjoy with sweet potato wedges, creme fraiche, and coriander, if desired.
