Effortlessly prep a versatile one-pot chicken dish in the slow cooker. Freeze in portions for three delightful meals - creamy goulash, bacon-mushroom, or zesty Mexican chili with beans.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 3kg chicken thigh fillets, fat trimmed
  • 2 brown onions, finely chopped
  • 5 garlic cloves, finely chopped
  • 4 fresh bay leaves
  • 250ml (1 cup) white wine
  • 625ml (2 1/2 cups) salt reduced chicken style liquid stock
  • 2 large sprigs fresh continental parsley
Instructions:
  • In a spacious non-stick frying pan over high heat, warm the oil. Season the chicken and cook in batches for about 10 minutes per batch, until beautifully golden. Then, place them in the 5-litre slow cooker bowl.
  • Cook the onion and garlic in a frying pan over medium heat until golden, stirring often, about 5 minutes. Add bay leaves and wine, simmer for another 5 minutes until reduced, then transfer to the slow cooker.
  • Pour the stock into the slow cooker and sprinkle in the parsley. Cover and let it cook on low for 4 hours or until the chicken is tender. Let it cool, then separate into 3 shallow storage containers and freeze until needed.
