Creamy slow cooker bacon and mushroom chicken recipe

Prepare big-batch chicken recipe ahead, transform into creamy bacon mushroom chicken. Easy meal prep for delicious dinners!
Ingredients:
  • 150g smoked streaky bacon, chopped
  • 250g button mushrooms, thickly sliced
  • 5 sprigs fresh thyme
  • 1 batch Freeze and save one-pot big-batch chicken (see notes for recipe)
  • 2 green shallots, sliced
  • 150g (1 cup) frozen peas, to serve
  • Brown rice, to serve (see notes)
Instructions:
  • Fry the bacon in a large non-stick pan over medium-high heat until golden, stirring often for about 5 minutes. Add mushrooms and cook until done, stirring often for about 4 minutes. Stir in cream and thyme. Let it cool slightly, then transfer to an airtight container and freeze.
  • Thaw the boscaiola sauce as per the notes. Combine the thawed chicken, peas, and sauce in a large saucepan. Heat over medium-high heat, stirring occasionally, until everything is warmed through, about 5 minutes. Serve with heated brown rice.
