Indulge in a creamy cheeseburger dip loaded with bacon and beef, easily made in a slow cooker for effortless entertaining.
Ingredients:
  • 8 ounces bacon
  • 0.5 pound ground beef
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, for about 10 minutes. Transfer the cooked bacon to a plate lined with paper towels, keeping the drippings in the skillet.
  • In a skillet, crumble ground beef and cook, stirring occasionally, until fully browned, about 5 to 7 minutes. Drain the beef, then return the skillet to low heat.
  • Combine diced tomatoes with green chile peppers, cream cheese, shredded Cheddar-Monterey Jack cheese blend, crumbled bacon (save a little for topping), and ground beef in a pan. Cook until cheese starts to melt, about 2 to 3 minutes. Transfer mixture to a slow cooker.
  • Slow cook the mixture until it is hot and bubbly, for 2 to 3 hours. Stir in parsley and top with the saved bacon before serving directly from the slow cooker set on Low.
