Ingredients:
  • 500g pkt Regular Australian Beef Mince
  • 1 green shallot, coarsely chopped
  • 1 zucchini, coarsely grated
  • 1 carrot, peeled, coarsely grated
  • 30g baby spinach
  • 1 garlic clove, quartered
  • 100g (1/2 cup) long-grain white rice
  • 510g jar Simply Tomato & Basil Pasta Sauce
  • 1 vegetable stock cube, crumbled
  • ½ x 450g pkt Simply Garlic Bread Twin Pack, to serve
Instructions:
  • Combine the beef, shallot, zucchini, carrot, spinach, and garlic in a food processor until fully mixed. Transfer the mixture to a bowl and add the rice. Shape the mixture into tablespoon-sized balls and arrange them on a large baking tray.
  • In a large saucepan over medium-high heat, combine pasta sauce, stock cube, and 500ml (2 cups) water. Season generously and bring to a boil. Gently add meatballs to the sauce. Reduce heat to low and simmer partially covered for 40 minutes until the meatballs are cooked and the sauce has thickened.
  • Prepare the garlic bread according to the instructions on the package.
  • Present the meatballs and sauce with the garlic bread on the side.
