Healthy fried rice with egg recipe

Healthy vegetable fried rice with fluffy omelette slices - a vegetarian delight that's low in calories and fat. Easy to make and irresistible! Check out our popular easy fried rice recipe for more inspiration.
Ingredients:
  • 2 tsp sesame oil
  • 2 eggs, lightly whisked
  • 1 large carrot, cut into matchsticks
  • 4 green shallots, thinly sliced, plus extra, thinly sliced, to serve
  • 1 head (about 300g) broccoli, stalks thinly sliced, head cut into small florets
  • 150g snow peas, cut into thirds
  • 1 bunch gai lan (Chinese broccoli), cut into 3cm pieces
  • 1 large red capsicum, deseeded, finely chopped
  • 405g (3 cups) cooked brown rice
  • 42.00 gm salt-reduced soy sauce
  • 20.00 ml mirin
Instructions:
  • Spray a large wok with oil and heat over medium heat. Pour in half of the beaten egg, letting it cook for 30 seconds before swirling to cover the base. Cook for another 30 seconds, then gently loosen the edges and move the omelette to a cutting board. Repeat with the rest of the egg. Roll up the omelette and slice thinly.
  • Turn up the heat to high and introduce sesame oil, carrot, and shallot into the wok. Stir-fry for 1 minute. Introduce broccoli, snow peas, gai lan, and capsicum. Stir-fry for 2 minutes until just tender. Add the rice, soy sauce, and mirin. Stir-fry until everything is well mixed and heated through. Gently mix in half of the omelette until fully combined.
  • Scoop the fragrant fried rice into individual serving bowls. Garnish each with the rest of the fluffy omelette and a sprinkle of extra shallot before serving.
