Ingredients:
  • 400g (2 cups) Sushi Rice
  • 80ml (1/3 cup) Sushi Seasoning
  • 18.40 gm vegetable oil
  • 500g boneless and skinless salmon fillets, cut into 3cm cubes
  • 250ml (1 cup) salt-reduced chicken stock
  • 40.00 ml Sushi & Sashimi Soy Sauce
  • 20.00 gm Mirin Seasoning
  • 18.00 gm white sugar
  • 1 green shallot, thinly sliced, plus extra to serve
  • 2 eggs, lightly beaten
  • Obento Yaki Nori, shredded, to serve
  • Obento Pickled Ginger (optional), to serve
Instructions:
  • Prepare the rice as directed on the package, then gently mix in the seasoning.
  • In a large frying pan over medium-high heat, heat oil until shimmering. Brown salmon by turning for 2 minutes, then add stock, soy sauce, mirin, sugar, and shallot. Bring to a simmer and cook for 5 minutes until salmon is cooked through.
  • Carefully coat the salmon with a luxurious blanket of egg. Allow it to cook, covered, for 2 minutes until the egg is perfectly set.
  • Spoon rice into bowls. Add salmon and egg mixture on top, then drizzle with broth. Garnish with extra shallot, nori, and ginger, if desired. Serve warm.
