Crispy cornmeal-coated salmon patties ready in just 30 minutes.
Ingredients:
  • 1 (15 ounce) can salmon, drained and liquid reserved
  • 0.33333334326744 cup chopped onion
  • 0.5 cup all-purpose flour, or more as needed
  • 1.5 teaspoons baking powder
  • 2 cups shortening, or more as needed
  • 0.25 cup cornmeal, or as needed
Instructions:
  • Combine salmon, onion, and egg in a bowl, then mix in flour. In a separate bowl, combine baking powder and 2 tablespoons of reserved salmon liquid; stir into salmon mixture until it holds together well. Adjust consistency by adding more flour if too soft or more reserved salmon liquid if too firm. Form small patties with the salmon mixture.
  • Warm the shortening in a skillet over medium heat until it melts.
  • Coat patties on both sides with cornmeal by gently pressing them into a shallow bowl.
  • Fry patties in hot shortening until beautifully golden on each side for approximately 5 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate.
