One-pot fish coconut curry recipe

Easy one-pot fish curry: cook fish with spices and coconut milk for a flavorful bowl in just 20 minutes.
Ingredients:
  • 18.40 gm macadamia oil
  • 1 brown onion, thinly sliced
  • 20.00 ml finely grated fresh ginger
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 200ml reduced-fat coconut milk
  • 400g sweet potato, peeled, cut into 2cm pieces
  • 200g green beans, sliced diagonally
  • 1 zucchini, halved lengthways, thinly sliced
  • 500g skinless barramundi fillets, cut into 4cm pieces
  • Lime wedges, to serve
  • Thinly sliced long, fresh green chilli
  • Fresh coriander sprigs, to serve
  • Steamed brown rice, to serve
Instructions:
  • In a large saucepan over medium heat, warm the oil. Sauté the onion until softened, about 5 minutes. Stir in ginger, cumin, coriander, and turmeric. Cook until fragrant, about 2 minutes. Pour in coconut milk, 200ml water, and add sweet potato. Bring to a boil, then lower heat to simmer covered for 8-10 minutes until the potato is tender.
  • Add the beans and simmer covered for 2 minutes until softened. Then add the zucchini and barramundi and simmer covered for 3-4 minutes until the barramundi is just cooked through and the vegetables are tender.
  • Garnish with lime, chili, fresh coriander, and serve with rice.
