Slow cooker coconut curry chicken recipe

Effortlessly delicious creamy chicken dinner made in a slow cooker. Prep in 10 mins, set it and forget it until it's time to enjoy.
Ingredients:
  • 750g chicken thighs, halved
  • 2 large carrots, chopped
  • 1 large brown onion, halved, thinly sliced
  • 255.00 gm Chicken Style Liquid Stock
  • 2-3 garlic gloves, crushed
  • 10.00 gm curry powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 30.00 ml White Plain Flour
  • 270g can coconut cream
  • Cooked rice, to serve
  • Steamed green beans, to serve
Instructions:
  • Layer chicken thighs, carrot, and onion in a slow cooker. Mix chicken stock, garlic, curry powder, coriander, turmeric, and flour in a jug. Pour over chicken. Cook on HIGH for 6 hours until chicken is tender.
  • Add the luxurious coconut cream to the dish, then cover and simmer on LOW for another hour.
  • Garnish the aromatic curry with fluffy rice and crisp green beans.
