"Prep ingredients, set in slow cooker, and enjoy a delicious, effortless meal with your loved ones."
Ingredients:
  • 1.4kg chicken pieces on the bone
  • 75g curry paste
  • 2 brown onions, cut into wedges
  • 400ml coconut milk
  • 20.00 ml lemongrass paste
  • 20.00 ml drained makrut lime leaves
  • 150g thick rice noodles
  • 200g snow peas, halved diagonally
  • 1 pak choy, halved or cut into wedges lengthways
  • 21.00 gm lime juice
  • 16.00 gm brown sugar
Instructions:
  • Add chicken, curry paste, onion, coconut milk, lemongrass, and lime leaves to a slow cooker. Cook covered for 4 hours on high (or 6 hours on low) until the chicken is tender and falls off the bone.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let sit for 5 minutes until tender. Drain and distribute evenly among serving bowls.
  • Simmer snow peas and pak choy in boiling water for 2 minutes until vibrant green. Then, quickly cool them in cold water and drain.
  • Stir in the lime juice, sugar, and fish sauce to the curry in the slow cooker until well mixed. Season to taste.
  • Serve the flavorful curry generously over the noodles in each bowl, and garnish with fresh snow peas and pak choy for a vibrant finish.
