Green curry seafood pilaf recipe

Elevate Thai green curry with Coles Zucchini Noodles for a low-carb, one-pot delight.
Ingredients:
  • 4 spring onions, thinly sliced
  • 56.00 gm green curry paste
  • 200g brown rice
  • 400ml light coconut milk
  • 250ml chicken
  • 500g seafood marinara mix
  • 250g pkt Zucchini Noodles
  • 62.50 ml chopped mint
  • 40.00 ml chopped coriander
Instructions:
  • In a large non-stick saucepan over medium heat, warm the oil. Stir in the garlic and spring onion and cook until the spring onion softens, about 1-2 mins. Stir in the curry paste and cook until aromatic, about 30 secs.
  • Add the rice and sauté for 1 minute. Pour in the creamy coconut milk and fragrant stock, mix well. Season with your favorite spices. Let it come to a gentle boil, then lower the heat. Cover and simmer for 20-25 minutes until the rice is perfectly cooked and the sauce is rich and thick.
  • Combine the seafood and zucchini in the pot and cover to cook until the seafood is cooked through, approximately 5 minutes. Stir in the fresh mint and coriander before serving in individual bowls.
