Quick and aromatic Thai green curry fish, ready in 15 minutes!
Ingredients:
  • 100g curry paste
  • 400ml can Coconut Cream
  • 600g white fish fillets (such as basa or pink ling), coarsely chopped
  • 125g pkt baby corn, sliced diagonally
  • 200g snow peas, halved
Instructions:
  • Heat a wok on high heat. Add the curry paste and cook while stirring for 1 minute until fragrant.
  • Pour in the luscious coconut cream and let it come to a gentle boil. Lower the heat to a simmer and gently introduce the fish and baby corn into the mix, cooking until the fish is tender and succulent, about 2 minutes.
  • Toss in snow peas and sauté until vibrant green and tender crisp, about 1 minute.
